We know broccoli is nutritious, but we get tired of the same recipes time after time. We want to try something newer than just steam it or eat it with dip. What do you do with your garden-fresh broccoli after you've harvested it? We have ideas for you!
Oven Roasted Broccoli
- 2 heads broccoli, cut up into florets. You can use the softer parts of the stalk as well.
- 2 T olive oil
- Salt
- 1/2-1 tsp lemon juice
- 2-4 garlic cloves, minced
- Salt and pepper to taste
Preheat oven to 400. Spray a cookie sheet with cooking spray. Toss all ingredients together in a bowl until broccoli is well coated, and spread evenly over cookie sheet. Bake in oven 15-20 minutes, until broccoli is tender, yet firm. Optional: sprinkle with parmesan cheese before serving.
Broccoli Quiche
- 1 1/4 cups flour
- 1/4 tsp salt
- 1/2 cup butter, chilled and diced
- 1/4 cup ice water
- 2 cups broccoli, diced
- 1 small onion, minced fine
- 1-2 cloves garlic, minced or run through garlic press
- 2 T butter
- 4 large eggs, well beaten
- 1 1/2 cups milk
- 1 1/2 cups cheese - try cheddar or mozzarella
- Salt and pepper to taste
- Optional: fried bacon crumbled
Preheat oven to 350. Make the crust by cutting the butter into the flour until it is well-blended. Don't go so long the butter warms up! Cold butter is how you make a flakey crust. Add water by spoonfuls until the crust holds together; discard extra. Roll out the crust and put into a pie plate or pastry pan.
Saute the onions in the butter until transparent; add garlic and broccoli and saute another minute or two while stirring. Pour vegetables into the crust and cover with cheese and bacon, if you are using it.
In a bowl, mix together milk, eggs, salt, and pepper. Carefully pour into crust, covering vegetables and cheese.
Bake until center is set, which could be 30 - 60 minutes. If you like, when done, put more cheese on top and put back into the oven until cheese is melted.
Bonus tip: Try chopping broccoli into smaller pieces and adding it as a pizza topping, or steaming the small bits lightly and mixing them in with your macaroni and cheese.
