Why is Kale Good for You?

Kale is packed with vitamins A, C, and K. It’s full of beneficial nutrients, such as calcium, iron, manganese, and potassium. Kale is also full of dietary fiber, which is good for your digestive health.

Kale has been found to help prevent many diseases, such as cancer, heart disease, high blood pressure, asthma, and diabetes. Making kale a regular part of your diet can also give you beautiful skin and hair.

How Do You Eat Kale?

One easy thing to do with fresh kale is to make it into delicious, crunchy kale chips. Kids love them! Here’s all you need:

  • 1 or more bunches of kale
  • 2 T olive oil per bunch
  • 1/2 t sea salt per bunch

Preheat your oven to 275 degrees F. Wash and dry the kale. Cut out the ribs and chop the kale into 1 to 2 inch pieces. Coat the kale in olive oil, then sprinkle with salt. For a different flavor, try adding 1 T lemon juice, 1/2 t dried garlic, or 1/4 t pepper. Line a baking sheet with parchment paper, and put on the kale in a single layer. Roast for 20 minutes, or until crispy. Wait until the kale cools down before sampling this crunchy treat.
