Summer Entertaining: 3 Drink Recipes with Borage Flair

Borage is more than just a pretty flower! These easy to grow blue blooms also make a beautiful garnish for your seasonal cocktails and their leaves boast a refreshing cucumber-like taste. 

Summer Lemonade (non-alcoholic)

Makes 8 servings

  • 1.5 cups fresh squeezed lemon juice
  • 6.5 cups cold water
  • ¾ cup caster (white) sugar
  • 1 handful blueberries or strawberries
  • 1 large lemon, sliced into discs, seeds removed
  • Ice cubes
  • Borage flowers for garnish

In a large pitcher, mix lemon juice, water and sugar until the sugar dissolves completely. Place in refrigerator for at least 2 hours to chill. 

Serve chilled lemonade over ice and garnish with lemon slice, berries and Borage flowers. This recipe can be made ahead and left to chill.

PIMM’s Cocktail

Makes 1 serving

  • 5oz PIMM’s No. 1
  • Lemonade (lemon-lime soda or ginger ale, if preferred)
  • Lemon slice, seeds removed
  • Cucumber slice
  • Sprig Borage leaves
  • Borage flower (optional)
  • Ice

Fill a highball glass with ice, add lemon slice, cucumber and sprig of Borage leaves. Measure and add 1.5 ounces PIMM’s No. 1. Top off glass with lemonade and give a gentle stir. Garnish with Borage flower if desired, to add flair.

Fancy Borage Cubes

Makes 12 cubes

  • Ice cube tray
  • 24-36 Borage blossoms
  • Water

If you have a get-together planned, making these Borage flower ice cubes will be an elegant touch that your guests will surely appreciate. Place blooms in each compartment of the ice cube tray, cover with water. Place in freezer for 3 hours or until frozen solid. These can be made ahead of time and kept on hand for unexpected guests.
